Easy Veggie Patties: A Quick and Delicious Meatless Meal

Ingredients

  • 1 cup cooked quinoa or rice
  • 1 cup grated carrots
  • 1/2 cup finely chopped bell pepper (any color)
  • 1/2 cup finely chopped onions
  • 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
  • 1/4 cup rolled oats
  • 2 tbsp ground flaxseed or chia seeds
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (for frying)

Instructions

  1. In a large bowl, combine the cooked quinoa or rice, grated carrots, bell pepper, onions, breadcrumbs, and oats.
  2. In a small bowl, mix the ground flaxseed with 2 tbsp of water and let it sit for a couple of minutes until it thickens (this will act as an egg replacer).
  3. Add the flaxseed mixture, garlic powder, cumin, paprika, salt, and pepper to the veggie mixture. Stir everything until well combined. If the mixture feels too wet, add a little more breadcrumbs or oats.
  4. Shape the mixture into small patties, about 2-3 inches in diameter.
  5. Heat olive oil in a non-stick skillet over medium heat.
  6. Place the patties in the skillet and cook for about 4-5 minutes on each side, until golden brown and crispy.
  7. Once cooked, remove the patties from the skillet and place them on a paper towel to drain excess oil.
  8. Serve the veggie patties warm with your favorite dipping sauce, or on a bun as a veggie burger!
