Ingredients
- 1 cup cooked quinoa or rice
- 1 cup grated carrots
- 1/2 cup finely chopped bell pepper (any color)
- 1/2 cup finely chopped onions
- 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
- 1/4 cup rolled oats
- 2 tbsp ground flaxseed or chia seeds
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil (for frying)
Instructions
- In a large bowl, combine the cooked quinoa or rice, grated carrots, bell pepper, onions, breadcrumbs, and oats.
- In a small bowl, mix the ground flaxseed with 2 tbsp of water and let it sit for a couple of minutes until it thickens (this will act as an egg replacer).
- Add the flaxseed mixture, garlic powder, cumin, paprika, salt, and pepper to the veggie mixture. Stir everything until well combined. If the mixture feels too wet, add a little more breadcrumbs or oats.
- Shape the mixture into small patties, about 2-3 inches in diameter.
- Heat olive oil in a non-stick skillet over medium heat.
- Place the patties in the skillet and cook for about 4-5 minutes on each side, until golden brown and crispy.
- Once cooked, remove the patties from the skillet and place them on a paper towel to drain excess oil.
- Serve the veggie patties warm with your favorite dipping sauce, or on a bun as a veggie burger!
