Easy Shepherd’s Pie – I’m Saving This

Ingredients

  • 1 lb ground beef or lamb
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots mix
  • 1/2 cup corn kernels (optional)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1/2 cup beef broth
  • 1/2 tsp thyme
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 3 cups mashed potatoes (store-bought or homemade)
  • 1/2 cup shredded cheddar cheese (optional, for topping)
  • 2 tbsp butter (melted, for brushing on top)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brown the meat: In a skillet over medium heat, cook the ground beef/lamb until browned. Drain excess fat.
  3. Sauté: Add onions and garlic to the meat, cooking until fragrant.
  4. Add veggies and sauce: Stir in peas, carrots, corn, tomato paste, Worcestershire sauce, beef broth, thyme, paprika, salt, and pepper. Simmer for 5-7 minutes until thickened.
  5. Layer it up: Transfer the meat mixture to a baking dish. Spread mashed potatoes evenly on top.
  6. Add cheese & butter: Sprinkle cheese on top (optional) and brush with melted butter for a golden finish.
  7. Bake: Bake for 20-25 minutes, until the top is golden and bubbly.
  8. Let cool for 5 minutes before serving.
