- In a large bowl, combine green cabbage, red cabbage, carrots, bell pepper, green onions, and cilantro.
- In a small bowl or jar, whisk together soy sauce, rice vinegar, sesame oil, honey, lime juice, ginger, garlic, and olive oil until smooth.
- Pour the dressing over the vegetables and toss well until everything is evenly coated.
- Sprinkle with toasted sesame seeds before serving.
- Serve immediately for maximum crunch, or refrigerate for 30 minutes to let flavors meld.
