Ingredients
- 2 cups shredded coconut (sweetened or unsweetened)
- 1 cup all-purpose flour
- 1 cup sugar
- 3 large eggs
- 1 cup milk (or coconut milk for extra flavor)
- ½ cup melted butter (or vegetable oil)
- 1 tsp vanilla extract
- 1 ½ tsp baking powder
- ¼ tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round or square baking pan.
- Add all the ingredients to a blender: coconut, flour, sugar, eggs, milk, melted butter, vanilla, baking powder, and salt.
- Blend on medium speed until smooth and well combined.
- Pour the batter into the prepared pan.
- Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool slightly, then slice and enjoy!
Optional: Dust with powdered sugar or top with extra shredded coconut for garnish.
