Easy Coconut Blender Cake

Ingredients

  • 2 cups shredded coconut (sweetened or unsweetened)
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 3 large eggs
  • 1 cup milk (or coconut milk for extra flavor)
  • ½ cup melted butter (or vegetable oil)
  • 1 tsp vanilla extract
  • 1 ½ tsp baking powder
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round or square baking pan.
  2. Add all the ingredients to a blender: coconut, flour, sugar, eggs, milk, melted butter, vanilla, baking powder, and salt.
  3. Blend on medium speed until smooth and well combined.
  4. Pour the batter into the prepared pan.
  5. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool slightly, then slice and enjoy!

Optional: Dust with powdered sugar or top with extra shredded coconut for garnish.
