Instructions
- Mix: In a large bowl, combine the desiccated coconut and sweetened condensed milk. Add vanilla extract and salt if using. Stir until fully combined into a sticky dough.
- Shape: Scoop out small portions and roll them into bite-sized balls using your hands. If the mixture is too sticky, lightly oil your palms or chill the mix for a few minutes.
- Coat: Roll each ball in extra desiccated coconut to coat them evenly.
- Chill: Place the coconut balls on a tray lined with parchment paper and chill in the refrigerator for about 10–15 minutes to firm up.
- Serve: Enjoy immediately or store in an airtight container in the fridge for up to a week!
