Easy Chocolate Mousse Recipe

  • 1 cup semi-sweet chocolate chips (or chopped chocolate)
  • 2 tablespoons unsalted butter
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Melt the chocolate: In a heatproof bowl, melt the chocolate chips and butter together over a pot of simmering water (double boiler) or in short bursts in the microwave. Stir until smooth. Let it cool slightly.
  2. Whip the egg whites: In a clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the sugar and continue to beat until stiff peaks form.
  3. Whip the cream: In a separate bowl, beat the heavy cream and vanilla extract until soft peaks form.
  4. Combine the yolks: Stir the egg yolks into the slightly cooled melted chocolate until smooth.
  5. Fold it all together: Gently fold the whipped cream into the chocolate mixture until mostly combined. Then gently fold in the beaten egg whites until smooth and fluffy.
  6. Chill and serve: Spoon the mousse into serving cups or bowls. Refrigerate for at least 2 hours or until set.
