- 1 cup semi-sweet chocolate chips (or chopped chocolate)
- 2 tablespoons unsalted butter
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Melt the chocolate: In a heatproof bowl, melt the chocolate chips and butter together over a pot of simmering water (double boiler) or in short bursts in the microwave. Stir until smooth. Let it cool slightly.
- Whip the egg whites: In a clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the sugar and continue to beat until stiff peaks form.
- Whip the cream: In a separate bowl, beat the heavy cream and vanilla extract until soft peaks form.
- Combine the yolks: Stir the egg yolks into the slightly cooled melted chocolate until smooth.
- Fold it all together: Gently fold the whipped cream into the chocolate mixture until mostly combined. Then gently fold in the beaten egg whites until smooth and fluffy.
- Chill and serve: Spoon the mousse into serving cups or bowls. Refrigerate for at least 2 hours or until set.
- Optional garnish: Top with extra whipped cream, chocolate shavings, or fresh berries before serving.
