Easy Banana Oatmeal Pancakes Recipe

These pancakes are incredibly easy to make with just a few basic ingredients. They’re a healthier alternative to traditional pancakes, naturally sweetened by banana and made hearty with oats. Perfect for a quick breakfast or snack!  

Ingredients:

  • 2 ripe bananas, mashed  
  • 1 cup rolled oats (not instant)
  • Optional additions (for flavor and texture):
    • 1 egg (helps bind and adds richness)
    • 1/4 teaspoon cinnamon
    • Pinch of salt
    • A splash of milk (if batter seems too thick)
    • A few drops of vanilla extract

Instructions:

  1. Mash the Bananas: In a mixing bowl, mash the ripe bananas thoroughly with a fork until they are mostly smooth. A few small lumps are okay.
  2. Combine with Oats: Add the rolled oats to the mashed bananas. Stir well to combine, ensuring the oats are evenly coated with the banana. Let the mixture sit for a few minutes (about 5-10) to allow the oats to absorb some of the moisture.  
  3. Add Optional Ingredients (if using): If you’re adding an egg, cinnamon, salt, milk, or vanilla, stir them into the banana-oat mixture until just combined. Don’t overmix. The batter should be somewhat thick but pourable. If it seems too thick, add a tiny splash of milk.
  4. Heat a Non-Stick Pan: Heat a lightly oiled or non-stick skillet or griddle over medium heat. You can use a little coconut oil, butter, or cooking spray.
  5. Cook the Pancakes: Once the pan is hot, pour or spoon about 1/4 cup of the batter onto the pan for each pancake.
  6. Cook on Both Sides: Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip carefully with a spatula.
  7. Serve: Transfer the cooked pancakes to a plate. Serve immediately and enjoy!

Tips and Notes:

  • Ripe Bananas are Key: The riper the bananas, the sweeter and moister your pancakes will be.
  • Oatmeal Type: Rolled oats (old-fashioned oats) work best for texture. Instant oats might make the pancakes too mushy.  
  • Consistency: The batter will be thicker than traditional pancake batter. Adjust the amount of oats slightly if needed to reach a consistency you like.
  • Toppings: These pancakes are delicious on their own, but you can also top them with fresh fruit, a drizzle of maple syrup, a sprinkle of nuts, or a dollop of yogurt.
  • Storage: Leftover pancakes can be stored in an airtight container in the refrigerator for a couple of days. Reheat them gently in a pan or microwave.
