Ingredients
- 1 package (1 lb) puff pastry, thawed
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg, beaten
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- 1 tablespoon olive oil
- 1 egg, beaten (for egg wash)
- Sesame seeds or poppy seeds (optional, for topping)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Prepare the Filling:
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the cooked spinach, feta cheese, ricotta cheese, Parmesan cheese, beaten egg, salt, pepper, and nutmeg (if using). Mix well.
- Prepare the Pastry:
- Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into equal squares or rectangles, depending on your desired size.
- Fill and Seal:
- Place a spoonful of the spinach mixture in the center of each pastry piece.
- Fold the pastry over the filling to create a triangle or rectangle shape. Press the edges with a fork to seal tightly.
- Egg Wash and Toppings:
- Place the stuffed pastries on the prepared baking sheet. Brush the tops with the beaten egg for a golden finish.
- Sprinkle sesame seeds or poppy seeds on top, if desired.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the pastries are puffed and golden brown.
- Serve:
- Let the pastries cool slightly before serving. Enjoy as an appetizer, snack, or light meal!
