Duck Confit and Porcini Mushroom Nems

This delectable fusion recipe combines the richness of duck confit with the earthy flavors of porcini mushrooms, wrapped in crispy nems (spring rolls). Perfect for a gourmet appetizer or a unique dinner.


Ingredients

  • For the Filling:
  • 2 duck confit legs (meat shredded)
  • 1 cup dried porcini mushrooms (rehydrated in warm water)
  • 1 shallot (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon five-spice powder
  • 1 tablespoon fresh cilantro (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • Salt and pepper to taste
  • For the Nems (Spring Rolls):
  • 12 rice paper wrappers
  • Oil for frying (vegetable or peanut oil)
  • For Serving:
  • Fresh lettuce leaves
  • Fresh herbs (mint, cilantro, basil)
  • Dipping sauce (nuoc cham or sweet chili sauce)

Instructions

  1. Prepare the Filling:
  • Rehydrate the porcini mushrooms in warm water for 15–20 minutes. Drain and chop finely.
  • In a skillet, sauté the shallot and garlic in a bit of oil until soft and fragrant.
  • Add the chopped porcini mushrooms and cook for 2–3 minutes until tender.
  • Stir in the shredded duck confit, soy sauce, fish sauce, five-spice powder, and season with salt and pepper. Cook for another 2–3 minutes to blend the flavors.
  • Remove from heat and stir in the fresh cilantro and parsley. Set aside to cool.
  1. Assemble the Nems:
  • Soak each rice paper wrapper in warm water for about 10 seconds to soften.
  • Lay the wrapper flat on a clean surface. Place 1–2 tablespoons of the duck and porcini filling in the center.
  • Fold the bottom of the wrapper over the filling, then fold in the sides, and roll it tightly to form the nem.
  • Repeat with the remaining filling and wrappers.
  1. Fry the Nems:
  • Heat oil in a deep pan over medium heat.
  • Fry the nems in batches for about 2–3 minutes on each side until golden and crispy.
  • Drain on paper towels.
  1. Serve:
  • Serve the nems wrapped in fresh lettuce leaves with herbs on the side.
  • Dip in your favorite sauce and enjoy!
