This delectable fusion recipe combines the richness of duck confit with the earthy flavors of porcini mushrooms, wrapped in crispy nems (spring rolls). Perfect for a gourmet appetizer or a unique dinner.
Ingredients
- For the Filling:
- 2 duck confit legs (meat shredded)
- 1 cup dried porcini mushrooms (rehydrated in warm water)
- 1 shallot (finely chopped)
- 2 cloves garlic (minced)
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon five-spice powder
- 1 tablespoon fresh cilantro (chopped)
- 1 tablespoon fresh parsley (chopped)
- Salt and pepper to taste
- For the Nems (Spring Rolls):
- 12 rice paper wrappers
- Oil for frying (vegetable or peanut oil)
- For Serving:
- Fresh lettuce leaves
- Fresh herbs (mint, cilantro, basil)
- Dipping sauce (nuoc cham or sweet chili sauce)
Instructions
- Prepare the Filling:
- Rehydrate the porcini mushrooms in warm water for 15–20 minutes. Drain and chop finely.
- In a skillet, sauté the shallot and garlic in a bit of oil until soft and fragrant.
- Add the chopped porcini mushrooms and cook for 2–3 minutes until tender.
- Stir in the shredded duck confit, soy sauce, fish sauce, five-spice powder, and season with salt and pepper. Cook for another 2–3 minutes to blend the flavors.
- Remove from heat and stir in the fresh cilantro and parsley. Set aside to cool.
- Assemble the Nems:
- Soak each rice paper wrapper in warm water for about 10 seconds to soften.
- Lay the wrapper flat on a clean surface. Place 1–2 tablespoons of the duck and porcini filling in the center.
- Fold the bottom of the wrapper over the filling, then fold in the sides, and roll it tightly to form the nem.
- Repeat with the remaining filling and wrappers.
- Fry the Nems:
- Heat oil in a deep pan over medium heat.
- Fry the nems in batches for about 2–3 minutes on each side until golden and crispy.
- Drain on paper towels.
- Serve:
- Serve the nems wrapped in fresh lettuce leaves with herbs on the side.
