Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch cake pans.
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Alternately add dry ingredients and sour cream, mixing until smooth.
- Divide batter evenly between the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
To Make the Frosting:
- Beat the cream cheese until smooth.
- Add powdered sugar and vanilla, and mix well.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until smooth.
Assembly:
- Place one cake layer on a plate and spread a generous amount of frosting.
- Add the second layer and frost the top and sides evenly.
- Chill for 30 minutes before serving for the best texture.
