DESCRIPTION
Chicken gizzards are a hidden superfood! They are rich in protein, iron, zinc, and vitamin B12, which help boost energy, improve digestion, and support muscle health. This simple and delicious recipe makes gizzards tender, flavorful, and perfect for a healthy meal.
INGREDIENTS
- 500g chicken gizzards (cleaned)
- 1 onion (finely chopped)
- 3 cloves garlic (minced)
- 2 tbsp cooking oil
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp black pepper
- 1 tsp red chili powder (optional)
- 1 tsp turmeric powder
- 1 tsp salt (to taste)
- 1 tsp cumin powder
- 1 tsp coriander powder
- 2 tomatoes (blended)
- 2 green chilies (slit)
- Fresh coriander leaves (for garnish)
- ½ cup water
INSTRUCTIONS
- Wash the chicken gizzards thoroughly and remove any yellow lining.
- Boil gizzards in water with a little salt for 25–30 minutes until tender. Drain and set aside.
- Heat oil in a pan and sauté onions until golden brown.
- Add garlic, ginger paste, and garlic paste. Cook for 1 minute.
- Add blended tomatoes and cook until oil separates.
- Add all spices and mix well.
- Add boiled gizzards and stir to coat with masala.
- Pour in water, cover, and simmer for 10–15 minutes.
- Add green chilies and cook for 2 more minutes.
- Garnish with fresh coriander and serve hot.
TIPS
✔ Remove the yellow membrane from gizzards for better taste and texture.
✔ Pressure cook for faster cooking (15 minutes on medium heat).
✔ Add lemon juice at the end for extra flavor.
✔ Serve with roti, naan, or rice.
