Ingredients

  • 500g chicken feet (cleaned and nails removed)
  • 1 onion (chopped)
  • 4 cloves garlic (crushed)
  • 1 inch ginger (sliced)
  • 2 bay leaves
  • 1 teaspoon black pepper
  • 1 teaspoon salt (to taste)
  • 1 tablespoon soy sauce (optional)
  • 1 tablespoon vinegar or lemon juice
  • 6 cups water
  • 1 tablespoon cooking oil

Instructions

  1. Wash chicken feet thoroughly with water and vinegar or lemon juice.
  2. Boil them in water for 5 minutes, then drain and rinse again.
  3. Heat oil in a pot and sauté onion, garlic, and ginger until fragrant.
  4. Add chicken feet and stir for 2–3 minutes.
  5. Add bay leaves, black pepper, salt, and soy sauce.
  6. Pour in water and bring to a boil.
  7. Cover and simmer on low heat for 1½ to 2 hours until soft and gelatinous.
  8. Taste and adjust seasoning if needed.
  9. Serve hot as soup or use as broth for other dishes.
