INGREDIENTS
- 1 lb chicken feet, cleaned and nails trimmed
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 small piece of ginger, sliced
- 2 star anise
- 1 tsp sugar
- 2 cups water or chicken broth
- Salt and pepper to taste
- Optional: chopped scallions or cilantro for garnish
Instructions
- Prep the chicken feet: Clean the chicken feet thoroughly by rinsing and trimming the nails. You can blanch them in boiling water for 5 minutes to remove impurities, then drain.
- Sauté aromatics: In a large pot, heat a bit of oil and sauté the garlic and ginger until fragrant.
- Simmer: Add the chicken feet, soy sauce, oyster sauce, vinegar, sugar, star anise, and water/broth. Stir to combine.
- Cook: Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours until the chicken feet are soft and gelatinous. Add more water if needed.
- Season: Adjust salt and pepper to taste.
- Serve: Garnish with scallions or cilantro and serve warm as a snack or side dish.
