INGREDIENTS

  • 1 lb chicken feet, cleaned and nails trimmed

  • 2 cloves garlic, minced
  • 1 small piece of ginger, sliced
  • 2 star anise
  • 1 tsp sugar
  • 2 cups water or chicken broth
  • Salt and pepper to taste

Instructions

  1. Prep the chicken feet: Clean the chicken feet thoroughly by rinsing and trimming the nails. You can blanch them in boiling water for 5 minutes to remove impurities, then drain.
  2. Sauté aromatics: In a large pot, heat a bit of oil and sauté the garlic and ginger until fragrant.
  3. Simmer: Add the chicken feet, soy sauce, oyster sauce, vinegar, sugar, star anise, and water/broth. Stir to combine.
  4. Cook: Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours until the chicken feet are soft and gelatinous. Add more water if needed.
  5. Season: Adjust salt and pepper to taste.
  6. Serve: Garnish with scallions or cilantro and serve warm as a snack or side dish.

Fun Fact: Chicken feet are rich in collagen, which may support skin, joint, and bone health!
