Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 medium carrots, peeled and sliced
- 2 stalks celery, chopped
- 1 jalapeño, finely chopped (optional, for extra heat)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 6 cups low-sodium chicken broth
- 2 cups cooked, shredded chicken breast
- 1 cup canned black beans, drained and rinsed
- 1 cup frozen corn
- 1 can (14.5 oz) diced tomatoes, with juice
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened, about 3-4 minutes.
