Dessert I Make Twice a Week: Just Put Everything in the Blender

INGREDENT

  • 1 cup heavy whipping cream
  • 1 cup mascarpone cheese (or cream cheese if not available)
  • 1/2 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 tbsp instant coffee or espresso powder
  • 1 tbsp cocoa powder (plus extra for dusting)
  • 12–16 ladyfinger biscuits (or sponge cake pieces)
  • 1/2 cup strong brewed coffee (cooled)
  • Optional: Dark chocolate shavings or cocoa for garnish

Instructions

  1. Brew the Coffee:
Prepare 1/2 cup of strong coffee and let it cool. Set aside.
  2. Blend the Cream:
In a blender, combine the heavy cream, mascarpone, sweetened condensed milk, vanilla extract, instant coffee, and 1 tbsp cocoa powder. Blend until smooth and creamy.
  3. Layer the Tiramisu:
In small cups or a dish, dip ladyfingers briefly in the cooled coffee and layer them at the bottom.
Pour a layer of the blended cream mixture over them.
Repeat the layers once more (ladyfingers + cream).
  4. Chill:
Refrigerate for at least 2–4 hours, or until set and nicely chilled.
  5. Serve:
Before serving, dust with extra cocoa powder and top with chocolate shavings if desired.
