Ingredients
- 2 cups cream cheese, softened
- 1 cup Greek yogurt or sour cream
- 1 cup sweetened condensed milk
- 3 large eggs
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- Juice of half a lemon
- 1 pre-made graham cracker crust (or make your own)
Instructions
- Add all ingredients — cream cheese, yogurt, condensed milk, eggs, sugar, cornstarch, vanilla, and lemon juice — to a blender.
- Blend until smooth and creamy, scraping down the sides if needed.
- Pour the mixture into the graham cracker crust and smooth the top.
- Bake at 325°F (160°C) for about 45–50 minutes, or until the center is just set but still slightly jiggly.
- Let cool to room temperature, then refrigerate for at least 4 hours (overnight is best).
- Slice, serve, and enjoy!
