Dessert I Make Twice a Week: Just Put Everything in the Blender

Ingredients

  • 2 cups cream cheese, softened
  • 1 cup Greek yogurt or sour cream
  • 1 cup sweetened condensed milk
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • Juice of half a lemon
  • 1 pre-made graham cracker crust (or make your own)

Instructions

  1. Add all ingredients — cream cheese, yogurt, condensed milk, eggs, sugar, cornstarch, vanilla, and lemon juice — to a blender.
  2. Blend until smooth and creamy, scraping down the sides if needed.
  3. Pour the mixture into the graham cracker crust and smooth the top.
  4. Bake at 325°F (160°C) for about 45–50 minutes, or until the center is just set but still slightly jiggly.
  5. Let cool to room temperature, then refrigerate for at least 4 hours (overnight is best).
  6. Slice, serve, and enjoy!
