Depression-Era Staple: Creamed Peas on Toast

Simple, filling, and more comforting than you’d expect! 👋👇

Ingredients:

  • 1 cup frozen or canned peas
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk (or more for desired consistency)
  • Salt and pepper, to taste
  • 2–4 slices of bread, toasted
  • Optional: a pinch of nutmeg or a sprinkle of grated cheese

Instructions:

  1. Cook the peas:
    • If using frozen peas, boil for 2–3 minutes until tender. Drain.
    • If using canned peas, drain and rinse.
  2. Make the cream sauce:
    • In a small saucepan, melt butter over medium heat.
    • Stir in flour to make a roux; cook 1–2 minutes, stirring constantly.
    • Gradually whisk in milk until smooth.
    • Cook for 3–5 minutes until thickened.
  3. Combine peas and sauce:
    • Stir peas into the cream sauce.
    • Season with salt, pepper, and optional nutmeg or cheese.
  4. Serve:
    • Spoon creamed peas over hot toasted bread.
    • Enjoy immediately!

Tips:

  • Use thick, hearty bread for a more filling meal.
  • Add sautéed onions or herbs for extra flavor.
  • Adjust milk to make the sauce thinner or thicker according to your taste.
  • Leftovers can be reheated gently on the stovetop, adding a splash of milk to loosen the sauce.
