Ingredients

  • 1/4 cup unsalted butter, melted
  • 1/2 cup packed brown sugar
  • 8-10 pineapple rings, drained (reserve juice)
  • Maraschino cherries (1 per pineapple ring)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk (or reserved pineapple juice for extra flavor)
  • 1 tsp vanilla extract
  • 1/4 cup unsalted butter, softened

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and lightly flour a 9-inch round cake pan.
  2. Prepare the topping:
In a small bowl, combine the melted butter and brown sugar. Pour this mixture into the bottom of the prepared cake pan, spreading it evenly. Arrange the pineapple rings on top of the sugar mixture and place a maraschino cherry in the center of each pineapple ring.
  3. Make the cake batter:
In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, beat together the granulated sugar and softened butter until light and fluffy. Add the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix again.
  4. Combine wet and dry ingredients:
Gradually add the dry ingredients to the wet ingredients, alternating with the milk (or reserved pineapple juice), starting and ending with the dry ingredients. Mix until smooth.
  5. Assemble and bake:
Pour the batter over the pineapple rings in the cake pan, spreading it evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Cool and flip:
Allow the cake to cool in the pan for about 10 minutes, then run a knife around the edge to loosen it. Invert the pan onto a serving plate to release the cake. Let it cool for a few more minutes before serving.
  7. Serve:
Enjoy this delicious pineapple upside-down cake as is, or with a scoop of vanilla ice cream or whipped cream for an extra treat!

Enjoy your delightful, fruity dessert!
