Ingredients:
For the crust:
- 1 (9-inch) refrigerated pie crust (or homemade)
For the filling:
- 1 lb ground beef (or turkey)
- 1 small onion, diced
- 1 packet taco seasoning mix
- 1 cup canned diced tomatoes with green chilies, drained
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce (for topping)
- ½ cup sour cream (for topping)
- Optional toppings: diced avocado, salsa, sliced jalapeños, chopped cilantro
Instructions:
- Preheat the Oven: Preheat your oven to 425°F (220°C).
- Prepare the Crust: Roll out the pie crust and fit it into a 9-inch pie plate. Press it gently against the sides and bottom. Prick the bottom with a fork to prevent bubbling.
- Cook the Beef: In a large skillet over medium heat, add the ground beef and diced onion. Cook until the beef is browned and the onions are soft, about 5-7 minutes. Drain excess fat if necessary.
- Add Seasonings: Stir in the taco seasoning, diced tomatoes, black beans, and corn. Mix well and cook for an additional 2-3 minutes until heated through.
- Assemble the Pie: Pour the beef mixture into the prepared pie crust, spreading it evenly. Top with shredded cheddar cheese.
- Bake: Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the cheese is bubbly.
- Cool and Serve: Remove from the oven and let it cool for about 5 minutes. Top with shredded lettuce, sour cream, and any additional toppings you desire.
- Slice and Enjoy: Cut into wedges and serve warm, with extra toppings on the side.
