Ingredients

  • 3 medium cucumbers, peeled and sliced
  • 2–3 medium tomatoes, cut into wedges
  • 1 medium sweet onion (like Vidalia), sliced into thin rings
  • ½ cup white vinegar
  • ¼ cup water
  • ¼ cup granulated sugar (adjust to taste)
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • Optional: 1 tsp dried dill or 1 tbsp fresh chopped dill
  • Optional: 1–2 cloves garlic, minced (for extra flavor)

Instructions

  1. In a large glass or plastic bowl, combine the sliced cucumbers, tomatoes, and onions.
  2. In a separate bowl or measuring cup, whisk together the vinegar, water, sugar, salt, and pepper until the sugar is mostly dissolved. Stir in dill and/or garlic if using.
  3. Pour the marinade over the vegetables. Toss gently to coat everything evenly.
  4. Cover the bowl and refrigerate for at least 2 hours (or overnight) to let the flavors meld.
