Ingredients
- 3 medium cucumbers, peeled and sliced
- 2–3 medium tomatoes, cut into wedges
- 1 medium sweet onion (like Vidalia), sliced into thin rings
- ½ cup white vinegar
- ¼ cup water
- ¼ cup granulated sugar (adjust to taste)
- 1 tsp salt
- ½ tsp freshly ground black pepper
- Optional: 1 tsp dried dill or 1 tbsp fresh chopped dill
- Optional: 1–2 cloves garlic, minced (for extra flavor)
Instructions
- In a large glass or plastic bowl, combine the sliced cucumbers, tomatoes, and onions.
- In a separate bowl or measuring cup, whisk together the vinegar, water, sugar, salt, and pepper until the sugar is mostly dissolved. Stir in dill and/or garlic if using.
- Pour the marinade over the vegetables. Toss gently to coat everything evenly.
- Cover the bowl and refrigerate for at least 2 hours (or overnight) to let the flavors meld.
- Stir before serving, and enjoy chilled as a refreshing side dish.
