Ingredients

For the cake base:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened

  • 2 large eggs
  • 1 tsp vanilla extract

  • ½ cup brown sugar (light or dark)
  • ½ cup granulated sugar
  • 1 tsp cinnamon
  • ½ cup unsalted butter, melted

Instructions

  1. Preheat oven: to 350°F (175°C). Grease and line an 8×8-inch (20×20 cm) baking pan.
  2. Prepare crumb topping: In a bowl, mix flour, brown sugar, granulated sugar, and cinnamon. Stir in melted butter until large crumbs form. Set aside.
  3. Make cake batter: In another bowl, whisk flour, baking powder, baking soda, and salt. In a separate large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla. Mix in sour cream/yogurt. Gradually add the dry ingredients until combined.
  4. Assemble: Spread the cake batter evenly into the prepared pan. Sprinkle the crumb topping generously over the batter.
  5. Bake: for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool & serve: Let it cool slightly, then dust with powdered sugar if desired. Slice and enjoy!
