Ingredients
For the cake base:
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream or plain yogurt
For the crumb topping (streusel):
- 1 cup all-purpose flour
- ½ cup brown sugar (light or dark)
- ½ cup granulated sugar
- 1 tsp cinnamon
- ½ cup unsalted butter, melted
Optional: Powdered sugar for dusting
Instructions
- Preheat oven: to 350°F (175°C). Grease and line an 8×8-inch (20×20 cm) baking pan.
- Prepare crumb topping: In a bowl, mix flour, brown sugar, granulated sugar, and cinnamon. Stir in melted butter until large crumbs form. Set aside.
- Make cake batter: In another bowl, whisk flour, baking powder, baking soda, and salt. In a separate large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla. Mix in sour cream/yogurt. Gradually add the dry ingredients until combined.
- Assemble: Spread the cake batter evenly into the prepared pan. Sprinkle the crumb topping generously over the batter.
- Bake: for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool & serve: Let it cool slightly, then dust with powdered sugar if desired. Slice and enjoy!
