Ingredients

For the bites:

  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Pepper Jack cheese

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For coating:

  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1–1½ cups seasoned breadcrumbs

For frying:

  • Vegetable oil (for deep frying)

Instructions

  1. In a bowl, mix the Monterey Jack, Pepper Jack, diced jalapeños, garlic powder, paprika, salt, pepper, and cream cheese (if using) until fully combined.
  2. Scoop small portions (about 1 tablespoon each) and roll into bite-sized balls. Place them on a baking sheet.
  3. Freeze the balls for 30–45 minutes until firm.
  4. Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  5. Dip each cheese ball in flour, then egg, then breadcrumbs. For extra crispiness, repeat the egg and breadcrumb steps for a double coating.
  6. Heat oil in a deep fryer or skillet to 350°F (175°C).
  7. Fry the bites in batches for 2–3 minutes or until golden brown. Don’t overcrowd the pan.
