Ingredients
For the bites:
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded Pepper Jack cheese
- 2–3 jalapeño peppers, finely diced (adjust to taste)
- 1 tablespoon cream cheese (optional for extra creaminess)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For coating:
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1–1½ cups seasoned breadcrumbs
For frying:
- Vegetable oil (for deep frying)
Instructions
- In a bowl, mix the Monterey Jack, Pepper Jack, diced jalapeños, garlic powder, paprika, salt, pepper, and cream cheese (if using) until fully combined.
- Scoop small portions (about 1 tablespoon each) and roll into bite-sized balls. Place them on a baking sheet.
- Freeze the balls for 30–45 minutes until firm.
- Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
- Dip each cheese ball in flour, then egg, then breadcrumbs. For extra crispiness, repeat the egg and breadcrumb steps for a double coating.
- Heat oil in a deep fryer or skillet to 350°F (175°C).
- Fry the bites in batches for 2–3 minutes or until golden brown. Don’t overcrowd the pan.
- Drain on paper towels and serve hot with ranch or your favorite dipping sauce.
