Delicious Cherry Bars Recipe

A delightful treat that’s perfect for any occasion! These cherry bars combine a buttery crust, a sweet and tangy cherry filling, and a crumbly topping.

Ingredients:

For the Crust:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

For the Filling:

  • 1 (21 ounce) can cherry pie filling

For the Crumble Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed

Instructions:

Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.  
  3. Combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.  
  4. Press half of the dough into the prepared pan.

Prepare the Filling:

  1. Spread the cherry pie filling evenly over the crust.

Prepare the Crumble Topping:

  1. In a medium bowl, combine the flour, brown sugar, granulated sugar, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.

Assemble and Bake:

  1. Sprinkle the crumble topping evenly over the cherry filling.
  2. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  3. Let cool completely before cutting into bars.
