Delicious and healthy oat-based cup pizza recipe

Ingredients

  • 1 cup oats (quick or rolled)
  • 1/2 cup milk (or water)
  • 1 egg
  • 1/4 cup shredded cheese (mozzarella or cheddar)
  • 1/2 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt
  • 2 tbsp pizza sauce
  • 2 tbsp diced bell peppers
  • 2 tbsp diced cooked chicken or pepperoni
  • 2 tbsp additional shredded cheese for topping

Instructions

  1. In a bowl, mix oats, milk, egg, 1/4 cup cheese, baking powder, garlic powder, Italian seasoning, and salt.
  2. Stir well until combined and let it sit for 5 minutes to soften the oats.
  3. Grease a microwave-safe mug or ramekin and pour the mixture inside.
  4. Microwave on high for 1.5 – 2 minutes until firm.
  5. Spread pizza sauce over the top, add diced bell peppers, chicken/pepperoni, and extra cheese.
  6. Microwave for another 30 seconds or until the cheese melts.
