Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup granulated erythritol or monk fruit sweetener
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/3 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar

Cinnamon Swirl Mixture:

  • 1/4 cup granulated erythritol
  • 1 tablespoon cinnamon
  • 1 tablespoon melted butter

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. In a large mixing bowl, whisk together almond flour, coconut flour, sweetener, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, beat the eggs until light and fluffy. Add melted butter, almond milk, vanilla extract, and apple cider vinegar. Mix until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until you get a smooth batter.
  5. In a small bowl, mix the cinnamon swirl ingredients – erythritol, cinnamon, and melted butter.
  6. Pour half of the batter into the prepared loaf pan and spread it evenly.
  7. Sprinkle half of the cinnamon swirl mixture over the batter. Use a toothpick or knife to swirl it slightly.
  8. Pour the remaining batter on top and smooth it out with a spatula.
  9. Sprinkle the rest of the cinnamon mixture on top and create another swirl pattern.
  10. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  11. Remove from the oven and allow the bread to cool in the pan for 10-15 minutes.
  12. Transfer to a wire rack and let it cool completely before slicing.
  13. Serve and enjoy your keto-friendly cinnamon bread with a cup of coffee or tea.
