Ingredients
- 1.5 lbs baby red potatoes, washed and halved
- 2–3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika (optional)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, toss the halved baby red potatoes with olive oil, garlic powder, onion powder, smoked paprika (if using), salt, and pepper until evenly coated.
- Spread the potatoes out in a single layer on the prepared baking sheet, cut side down for extra crispiness.
- Roast for 25–30 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges.
- Remove from the oven and sprinkle with fresh parsley if desired.
