Ingredients
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups unsweetened cocoa powder
- 1 1/2 cups sugar
- 1 cup unsalted butter, softened
- 3 large eggs
- 1 1/2 tsp vanilla extract
- 1 1/2 cups whole milk
- 1 cup boiling water
- 1/2 cup sour cream
For the Fudge Frosting:
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1/2 cup unsalted butter
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat Oven and Prepare Pans: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
- Make the Cake Batter: In a large bowl, whisk together flour, baking powder, baking soda, salt, cocoa powder, and sugar. In a separate bowl, cream together butter, eggs, and vanilla extract until light and fluffy. Gradually add the dry ingredients to the wet ingredients, alternating with milk. Mix in sour cream until smooth.
- Add Boiling Water: Stir in the boiling water until the batter is well combined (the batter will be thin).
- Bake the Cake: Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- Prepare the Fudge Frosting: In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and stir in chocolate chips until smooth and melted. Add butter, vanilla extract, and salt, and stir until combined. Let the frosting cool to room temperature, thickening as it cools.
- Assemble the Cake: Once the cakes are completely cool, place one layer on a serving platter. Spread a generous layer of fudge frosting on top. Place the second cake layer on top and frost the top and sides of the cake with the remaining fudge frosting.
- Serve and Enjoy: Allow the cake to set for about 30 minutes for the frosting to firm up, then slice and enjoy the rich, decadent chocolate goodness!
