Ingredients:
For the Lobster and Scallops:
- 2 lobster tails (6-8 oz each)
- 8 large sea scallops, patted dry
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp smoked paprika (optional)
For the Garlic Butter Sauce:
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1/4 cup dry white wine (or chicken broth)
- 1 tbsp fresh lemon juice
- 1 tbsp chopped fresh parsley (plus extra for garnish)
- Pinch of red pepper flakes (optional)
Instructions:
Step 1: Prep the Lobster Tails
- Using kitchen shears, cut the top shell of each lobster tail down the center. Gently pull the meat out of the shell, keeping it attached at the base. Lay the meat on top of the shell.
- Season the lobster tails with salt, pepper, and smoked paprika for extra flavor.
Step 2: Sear the Scallops
- Heat a large skillet over medium-high heat and add olive oil.
- Season the scallops with salt and pepper.
- Place the scallops in the hot skillet and cook for 2-3 minutes per side, until golden brown with a crisp crust. Remove and set aside.
Step 3: Cook the Lobster Tails
- In the same skillet, reduce the heat to medium and add 2 tablespoons of butter.
- Place the lobster tails meat-side down and cook for 3-4 minutes. Flip and cook another 3-4 minutes until the lobster is opaque and fully cooked. Remove and set aside.
Step 4: Make the Garlic Butter Sauce
- In the skillet, melt the remaining butter and sauté the minced garlic for 1-2 minutes until fragrant.
- Deglaze the pan with white wine, scraping up any browned bits, and simmer for 2 minutes.
- Stir in lemon juice, red pepper flakes (if using), and parsley.
Step 5: Combine and Serve
- Return the scallops and lobster tails to the skillet, spooning the garlic butter sauce over the top. Cook for 1-2 minutes to warm everything through.
- Garnish with additional parsley and serve immediately with crusty bread, mashed potatoes, or a side of roasted vegetables.
