Instructions
- Prepare the Oven:
Preheat oven to 350°F (175°C). Line and lightly grease a 9-inch springform pan. - Make the Carrot Cake Batter:
- In a large bowl, mix almond flour, oat flour, coconut sugar, baking powder, baking soda, cinnamon, nutmeg, and ginger.
- In another bowl, whisk eggs, coconut oil, and vanilla.
- Combine wet and dry ingredients, then fold in grated carrots, nuts, and raisins.
- Bake the Carrot Cake Base:
Spread the carrot cake batter evenly into the pan. Bake for 20–25 minutes, until lightly golden and set. Remove and let cool slightly. - Prepare the Cheesecake Layer:
- In a mixing bowl, beat dairy-free cream cheese, coconut cream, maple syrup, starch, vanilla, and lemon juice until smooth and creamy.
- Assemble:
Pour the cheesecake mixture over the cooled carrot cake base. Smooth the top. - Bake the Cheesecake:
Place the pan in a larger baking dish with 1 inch of hot water (water bath method). Bake for 45–55 minutes, until the edges are set but the center is slightly jiggly. - Cool & Chill:
Remove from oven, cool completely, then refrigerate at least 4 hours or overnight to set. - Serve:
