Dairy-Free & Gluten-Free Carrot Cake Cheesecake

Ingredients

For the Carrot Cake Layer:

  • 1 cup almond flour
  • ½ cup gluten-free oat flour
  • ½ cup coconut sugar (or brown sugar)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • 2 large eggs (or flax eggs for vegan)
  • ⅓ cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 ½ cups finely grated carrots
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup raisins (optional)

For the Cheesecake Layer:

  • 2 cups dairy-free cream cheese (almond or cashew-based)
  • ½ cup coconut cream (thick part from canned coconut milk)
  • ½ cup maple syrup (or agave nectar)
  • 2 tbsp cornstarch or arrowroot starch
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

Instructions

  1. Prepare the Oven:
Preheat oven to 350°F (175°C). Line and lightly grease a 9-inch springform pan.
  2. Make the Carrot Cake Batter:
    • In a large bowl, mix almond flour, oat flour, coconut sugar, baking powder, baking soda, cinnamon, nutmeg, and ginger.
    • In another bowl, whisk eggs, coconut oil, and vanilla.
    • Combine wet and dry ingredients, then fold in grated carrots, nuts, and raisins.
  3. Bake the Carrot Cake Base:
Spread the carrot cake batter evenly into the pan. Bake for 20–25 minutes, until lightly golden and set. Remove and let cool slightly.
  4. Prepare the Cheesecake Layer:
    • In a mixing bowl, beat dairy-free cream cheese, coconut cream, maple syrup, starch, vanilla, and lemon juice until smooth and creamy.
  5. Assemble:
Pour the cheesecake mixture over the cooled carrot cake base. Smooth the top.
  6. Bake the Cheesecake:
Place the pan in a larger baking dish with 1 inch of hot water (water bath method). Bake for 45–55 minutes, until the edges are set but the center is slightly jiggly.
  7. Cool & Chill:
Remove from oven, cool completely, then refrigerate at least 4 hours or overnight to set.
  8. Serve:
Slice and enjoy the rich, spiced carrot cake base with creamy, dairy-free cheesecake topping—the best of both worlds!

Do you want me to also include a dairy-free cream cheese frosting for the top (like traditional carrot cake has)?
