Ingredients
- 2 large eggs
- ½ cup (100g) granulated sugar
- ¼ cup (60ml) milk
- ¼ cup (60ml) vegetable oil (or melted butter)
- 1 tsp vanilla extract
- 1 cup (125g) all-purpose flour
- 1½ tsp baking powder
- Pinch of salt
- Optional: ¼ cup mini chocolate chips, berries, or nuts
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tray with cupcake liners or lightly grease it.
- In a mixing bowl, whisk together the eggs and sugar until pale and slightly frothy.
- Add the milk, oil, and vanilla extract. Mix until well combined.
- Sift in the flour, baking powder, and salt. Gently fold until just combined. (Do not overmix!)
- If using add-ins (chocolate chips, etc.), fold them in now.
- Pour the batter into muffin cups, filling each about ¾ full.
- Bake for 12–15 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool slightly before serving. Enjoy warm for the best melt-in-your-mouth texture!
