Cup Muffins recipe that’s soft, fluffy, and ready in about 15 minutes

Ingredients

  • 2 large eggs
  • ½ cup (100g) granulated sugar
  • ¼ cup (60ml) milk
  • ¼ cup (60ml) vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1½ tsp baking powder
  • Pinch of salt
  • Optional: ¼ cup mini chocolate chips, berries, or nuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tray with cupcake liners or lightly grease it.
  2. In a mixing bowl, whisk together the eggs and sugar until pale and slightly frothy.
  3. Add the milk, oil, and vanilla extract. Mix until well combined.
  4. Sift in the flour, baking powder, and salt. Gently fold until just combined. (Do not overmix!)
  5. If using add-ins (chocolate chips, etc.), fold them in now.
  6. Pour the batter into muffin cups, filling each about ¾ full.
  7. Bake for 12–15 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool slightly before serving. Enjoy warm for the best melt-in-your-mouth texture!
