Cucumber Salad with Black and White Sesame Seeds and Spring Onion

Ingredients

  • 2 large cucumbers, thinly sliced
  • 2 spring onions, finely chopped
  • 1 tablespoon black sesame seeds
  • 1 tablespoon white sesame seeds
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or maple syrup
  • ½ teaspoon salt
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. In a small dry pan, toast the black and white sesame seeds over medium heat for 1-2 minutes until fragrant. Set aside.
  2. In a bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, salt, and red pepper flakes (if using).
  3. Place the sliced cucumbers and spring onions in a large bowl.
  4. Pour the dressing over the cucumbers and toss to combine.
  5. Sprinkle toasted sesame seeds on top and mix gently.
  6. Let the salad sit for 10-15 minutes to allow the flavors to meld.
