Ingredients
- 2 large cucumbers, thinly sliced
- 2 spring onions, finely chopped
- 1 tablespoon black sesame seeds
- 1 tablespoon white sesame seeds
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon honey or maple syrup
- ½ teaspoon salt
- ¼ teaspoon red pepper flakes (optional)
Instructions
- In a small dry pan, toast the black and white sesame seeds over medium heat for 1-2 minutes until fragrant. Set aside.
- In a bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, salt, and red pepper flakes (if using).
- Place the sliced cucumbers and spring onions in a large bowl.
- Pour the dressing over the cucumbers and toss to combine.
- Sprinkle toasted sesame seeds on top and mix gently.
- Let the salad sit for 10-15 minutes to allow the flavors to meld.
