Cucumber, Onion, and Tomato Salad Recipe

A classic, light, and refreshing salad perfect for summer or as a side dish. It’s easy to make and packed with fresh flavors.

Ingredients:

  • 2 medium cucumbers (English or regular), diced
  • 2 medium ripe tomatoes, diced
  • 1/2 red onion, thinly sliced or diced
  • 2 tablespoons fresh parsley, chopped (or dill, or a mix)
  • 2 tablespoons fresh lemon juice (or red wine vinegar)
  • 2 tablespoons olive oil  
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Prepare the Vegetables:
    • Wash the cucumbers and tomatoes thoroughly.
    • Dice the cucumbers into bite-sized pieces. If using regular cucumbers, you may peel them and remove the seeds if desired. English cucumbers usually don’t need peeling or seeding.  
    • Dice the tomatoes into similar-sized pieces.
    • Thinly slice or dice the red onion.
    • Chop the fresh parsley (or dill).
  2. Combine the Ingredients:
    • In a medium-sized bowl, combine the diced cucumbers, tomatoes, and red onion.
    • Add the chopped parsley (or dill).
  3. Dress the Salad:
    • In a small bowl, whisk together the lemon juice (or red wine vinegar), olive oil, salt, and pepper.
    • Pour the dressing over the vegetables and gently toss to combine.
  4. Season and Serve:
    • Taste the salad and adjust the seasoning with more salt and pepper as needed.
    • For best flavor, let the salad sit for about 10-15 minutes before serving to allow the flavors to meld.
    • Serve chilled or at room temperature.
  5. Optional additions:
    • Feta cheese crumbles.
    • Kalamata olives.
    • a pinch of dried oregano.
    • a dash of garlic powder.
