Ingredients:
- 2 medium cucumbers (English or regular), diced
- 2 medium ripe tomatoes, diced
- 1/2 red onion, thinly sliced or diced
- 2 tablespoons fresh parsley, chopped (or dill, or a mix)
- 2 tablespoons fresh lemon juice (or red wine vinegar)
- 2 tablespoons olive oil
- Salt and freshly ground black pepper to taste
Instructions:
- Prepare the Vegetables:
- Wash the cucumbers and tomatoes thoroughly.
- Dice the cucumbers into bite-sized pieces. If using regular cucumbers, you may peel them and remove the seeds if desired. English cucumbers usually don’t need peeling or seeding.
- Dice the tomatoes into similar-sized pieces.

- Chop the fresh parsley (or dill).
