- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup shredded purple cabbage
- 1 cup shredded carrots

- ¼ cup fresh cilantro, chopped
- ¼ cup green onions, sliced
- ½ cup roasted peanuts, crushed
- 1 tablespoon sesame seeds
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika

- ¼ teaspoon black pepper
For the Peanut Dressing:
- ¼ cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- 1 tablespoon honey or maple syrup
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 2–3 tablespoons water (to thin, as needed)
Instructions
- Roast the Chickpeas: Preheat the oven to 400°F (200°C). Pat the chickpeas dry with a paper towel. Toss them with olive oil, garlic powder, smoked paprika, salt, and black pepper. Spread evenly on a baking sheet and roast for 20–25 minutes, shaking halfway through, until crispy. Let them cool.
