Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, finely chopped
  • ½ cup cucumber, diced
  • ¼ cup red onion, finely sliced
  • ¼ cup fresh cilantro, chopped
  • ¼ cup green onions, sliced
  • ½ cup roasted peanuts, crushed
  • 1 tablespoon sesame seeds
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Peanut Dressing:

  • ¼ cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 2–3 tablespoons water (to thin, as needed)

Instructions

  1. Roast the Chickpeas: Preheat the oven to 400°F (200°C). Pat the chickpeas dry with a paper towel. Toss them with olive oil, garlic powder, smoked paprika, salt, and black pepper. Spread evenly on a baking sheet and roast for 20–25 minutes, shaking halfway through, until crispy. Let them cool.
  2. Prepare the Vegetables: In a large bowl, combine shredded cabbage, carrots, red bell pepper, cucumber, red onion, cilantro, and green onions. Toss gently to mix.
  3. Make the Peanut Dressing: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, lime juice, honey (or maple syrup), sesame oil, grated ginger, and minced garlic. Gradually add water, one tablespoon at a time, until the dressing reaches your desired consistency.
  4. Assemble the Salad: Add the roasted chickpeas to the vegetable mixture. Drizzle the peanut dressing over the salad and toss everything well to coat.
  5. Garnish and Serve: Sprinkle crushed peanuts and sesame seeds on top for extra crunch. Serve immediately for the best texture.
