Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the flour, powdered sugar, and salt.
- Add the cold butter cubes and use a pastry cutter or your fingertips to blend until the mixture resembles coarse crumbs.
- Add vanilla extract and stir to combine. If you’re adding nuts, fold them in now.
- Roll the dough into small balls (about 1 inch in diameter). Place them on the prepared baking sheet, leaving space between each one.
- Flatten each ball slightly with your fingers or the bottom of a glass.
- Roll the flattened dough in granulated sugar and optionally sprinkle with colorful sugar or sprinkles for extra sweetness.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
