- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 1 egg, beaten (for binding)
For coating:

- 1 egg, beaten (for dipping)
- 1 cup breadcrumbs
For frying:

Instructions
- Prepare the filling:
In a bowl, mix mashed potatoes (or other chosen filling), onions, parsley, cheese, salt, pepper, garlic powder, and one beaten egg. Mix well until everything is combined. - Shape the croquettes:
Take a small portion of the mixture and shape it into cylinders or small balls. Repeat until all mixture is used. - Coat the croquettes:
- Roll each croquette first in flour.
- Dip into beaten egg.
- Coat with breadcrumbs evenly.
- Chill (optional but helps hold shape):
Place the coated croquettes in the fridge for 15–20 minutes to firm up. - Fry:
Heat oil in a deep pan over medium heat. Once hot, fry croquettes in batches until golden brown and crispy on all sides (about 3–4 minutes). - Drain:
Remove and place on a paper towel to drain excess oil. - Serve:
Serve hot with ketchup, garlic mayo, or your favorite dipping sauce!
