Croquettes — crispy, golden bites perfect as a snack or appetizer

Ingredients

  • 2 cups mashed potatoes (or cooked chicken/fish/vegetables, finely chopped)
  • 1/2 cup grated cheese (optional, for extra richness)
  • 1/4 cup finely chopped onions
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1 egg, beaten (for binding)

For coating:

  • 1 cup all-purpose flour
  • 1 egg, beaten (for dipping)
  • 1 cup breadcrumbs

For frying:

  • Oil for deep frying

Instructions

  1. Prepare the filling:
In a bowl, mix mashed potatoes (or other chosen filling), onions, parsley, cheese, salt, pepper, garlic powder, and one beaten egg. Mix well until everything is combined.
  2. Shape the croquettes:
Take a small portion of the mixture and shape it into cylinders or small balls. Repeat until all mixture is used.
  3. Coat the croquettes:
    • Roll each croquette first in flour.
    • Dip into beaten egg.
    • Coat with breadcrumbs evenly.
  4. Chill (optional but helps hold shape):
Place the coated croquettes in the fridge for 15–20 minutes to firm up.
  5. Fry:
Heat oil in a deep pan over medium heat. Once hot, fry croquettes in batches until golden brown and crispy on all sides (about 3–4 minutes).
  6. Drain:
Remove and place on a paper towel to drain excess oil.
  7. Serve:
Serve hot with ketchup, garlic mayo, or your favorite dipping sauce!
