Crockpot Chicken and Gravy

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 packet (1 oz) dry chicken gravy mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme (optional)
  • ½ cup sour cream (optional, for extra creaminess)
  • Cooked rice, mashed potatoes, or egg noodles (for serving)

Instructions

  1. Prepare the Crockpot: Lightly spray the inside of your crockpot with nonstick cooking spray.
  2. Mix the Sauce: In a medium bowl, whisk together the chicken gravy mix, cream of chicken soup, chicken broth, garlic powder, onion powder, black pepper, and thyme until smooth.
  3. Add Chicken: Place the chicken breasts in the crockpot and pour the gravy mixture evenly over the top, making sure the chicken is covered.
  4. Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is tender and cooked through.
  5. Shred & Finish: Once cooked, shred the chicken directly in the crockpot using two forks. Stir in the sour cream if using, to make the gravy extra creamy.
  6. Serve: Serve the shredded chicken and gravy over mashed potatoes, rice, or noodles. Spoon extra gravy on top and enjoy!
