These golden, crispy potato croquettes are a delicious and satisfying side dish or snack. Made with mashed potatoes, coated in breadcrumbs, and fried to perfection, they’re sure to be a hit with everyone.
Ingredients:
- 2 lbs potatoes, peeled and cubed
- 1/4 cup milk
- 2 tablespoons butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
Instructions:
- Cook the potatoes: Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender when pierced with a fork, about 15-20 minutes.
- Mash the potatoes: Drain the potatoes and return them to the pot. Mash them with the milk, butter, salt, and pepper until smooth and creamy.
- Shape the croquettes: Let the mashed potatoes cool slightly, then shape them into small cylinders or ovals.
- Coat the croquettes: Set up a breading station with three shallow dishes. In the first dish, place the flour. In the second dish, place the beaten eggs. In the third dish, place the breadcrumbs.
- Bread the croquettes: Dredge each croquette in the flour, then dip it in the egg, and finally coat it in the breadcrumbs. Make sure the croquettes are evenly coated.
- Fry the croquettes: Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Carefully add the croquettes to the hot oil, in batches, and fry until golden brown and crispy on all sides, about 3-5 minutes per batch.
- Drain and serve: Remove the croquettes from the oil with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
