Crispy Potato Croquettes Recipe

These golden, crispy potato croquettes are a delicious and satisfying side dish or snack. Made with mashed potatoes, coated in breadcrumbs, and fried to perfection, they’re sure to be a hit with everyone.

Ingredients:

  • 2 lbs potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions:

  1. Cook the potatoes: Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender when pierced with a fork, about 15-20 minutes.
  2. Mash the potatoes: Drain the potatoes and return them to the pot. Mash them with the milk, butter, salt, and pepper until smooth and creamy.
  3. Shape the croquettes: Let the mashed potatoes cool slightly, then shape them into small cylinders or ovals.
  4. Coat the croquettes: Set up a breading station with three shallow dishes. In the first dish, place the flour. In the second dish, place the beaten eggs. In the third dish, place the breadcrumbs.
  5. Bread the croquettes: Dredge each croquette in the flour, then dip it in the egg, and finally coat it in the breadcrumbs. Make sure the croquettes are evenly coated.
  6. Fry the croquettes: Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Carefully add the croquettes to the hot oil, in batches, and fry until golden brown and crispy on all sides, about 3-5 minutes per batch.
  7. Drain and serve: Remove the croquettes from the oil with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
