Ingredients:

• 1 cup fresh spinach, finely chopped
• ½ cup feta cheese, crumbled
• ½ cup ricotta cheese
• 2 tablespoons olive oil
• 1 clove garlic, minced
• ½ teaspoon dried oregano
• ½ teaspoon dried thyme
• ¼ teaspoon black pepper
• ¼ teaspoon salt (adjust as needed)
• ½ teaspoon red pepper flakes (optional)
• 6 sheets phyllo pastry
• ¼ cup melted butter or olive oil for brushing
• 1 egg, beaten (for egg wash)
• 1 tablespoon sesame seeds or nigella seeds for topping (optional)

Instructions:

• Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
• Heat 2 tablespoons of olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
• Add chopped spinach and cook for 2-3 minutes until wilted. Remove from heat and allow it to cool slightly.
• In a mixing bowl, combine feta cheese, ricotta cheese, cooked spinach, dried oregano, thyme, black pepper, salt, and red pepper flakes. Mix well to create a uniform filling.
• Lay one sheet of phyllo pastry on a clean surface and lightly brush with melted butter or olive oil. Layer another sheet on top and repeat until you have three layers.
• Cut the stacked phyllo into strips about 3 inches wide.
• Place a spoonful of the spinach and feta mixture at one end of each strip. Fold one corner over to form a triangle, then continue folding in a triangle shape until the entire strip is wrapped.
• Repeat with the remaining phyllo sheets and filling.
• Place the prepared crisps on the baking sheet and brush the tops with beaten egg. Sprinkle sesame seeds or nigella seeds for extra crunch and flavor.
• Bake for 18-22 minutes or until golden brown and crisp.
• Remove from the oven and let them cool slightly before serving.
