- 1.5 lbs (about 700 g) baby potatoes, halved
- 3 tbsp olive oil

Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare potatoes: In a large mixing bowl, add halved baby potatoes.
- Season: Drizzle with olive oil, then add minced garlic, Parmesan, salt, pepper, and Italian seasoning. Toss well to coat evenly.
- Arrange on baking sheet: Place potatoes cut-side down for maximum crispiness. Spread them out so they’re not touching too much.
- Bake: Roast for 35–40 minutes, or until golden brown and crispy.
- Garnish & serve: Sprinkle with fresh parsley before serving hot.
