Ingredients:
- 4 large potatoes (Russet potatoes are ideal)

- Optional: seasoning like paprika, garlic powder, or black pepper
Instructions:
- Prepare the Potatoes:
- Peel the potatoes (optional) and cut them into even-sized strips for uniform frying.
- Soak the potato strips in cold water for 30 minutes to remove excess starch. This helps them get crispier during frying.
- Dry the Potatoes:
- After soaking, drain and thoroughly pat dry the potato strips using paper towels.
- First Fry (Blanching):
- Heat the oil in a deep pot or fryer to 325°F (160°C).
- Fry the potatoes in batches for 3-4 minutes, until they start to soften but don’t turn golden yet. Remove and drain on paper towels.
- Second Fry (Crisping):
- Increase the oil temperature to 375°F (190°C).
- Fry the potatoes again in batches for 2-3 minutes or until they turn golden brown and crispy. Remove and drain on paper towels.
- Season and Serve:
- While the fries are still hot, sprinkle with salt and your preferred seasonings.
- Serve immediately with your favorite dipping sauces. Enjoy!
