Crispy Fried Rice Patties with Spicy Mayo Drizzle

Ingredients

  • 2 cups cooked rice (preferably day-old)
  • ½ cup shredded cheese (cheddar, mozzarella, or parmesan)
  • ¼ cup green onions, finely chopped
  • 1 egg, beaten
  • 2 tbsp cornstarch or flour
  • 1 tsp soy sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper to taste
  • ½ cup panko breadcrumbs (for extra crispiness)
  • Oil for frying

Spicy Mayo Drizzle:

  • ¼ cup mayonnaise
  • 1 tbsp sriracha (adjust to taste)
  • 1 tsp lemon juice or rice vinegar
  • ½ tsp honey (optional)

Instructions

  1. Prepare the rice mixture: In a large bowl, mix cooked rice, shredded cheese, green onions, beaten egg, cornstarch, soy sauce, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  2. Form the patties: Take a small handful of the mixture and shape it into a patty. Repeat with the remaining mixture.
  3. Coat with breadcrumbs: Lightly press each patty into the panko breadcrumbs, ensuring an even coating.
  4. Heat the oil: In a pan, heat about ½ inch of oil over medium heat until shimmering.
  5. Fry the patties: Carefully place the patties into the oil and fry for 3-4 minutes on each side or until golden brown and crispy. Drain on a paper towel.
  6. Make the spicy mayo: Mix mayonnaise, sriracha, lemon juice, and honey (if using) in a small bowl.
  7. Drizzle and serve: Drizzle the spicy mayo over the crispy patties and garnish with extra green onions. Serve hot!
