- 2 tbsp cornstarch or flour

- ½ tsp onion powder
- Salt & pepper to taste
- ½ cup panko breadcrumbs (for extra crispiness)
- Oil for frying
Spicy Mayo Drizzle:
- ¼ cup mayonnaise
- 1 tbsp sriracha (adjust to taste)
- 1 tsp lemon juice or rice vinegar
- ½ tsp honey (optional)
Instructions
- Prepare the rice mixture: In a large bowl, mix cooked rice, shredded cheese, green onions, beaten egg, cornstarch, soy sauce, garlic powder, onion powder, salt, and pepper. Stir until well combined.
- Form the patties: Take a small handful of the mixture and shape it into a patty. Repeat with the remaining mixture.
- Coat with breadcrumbs: Lightly press each patty into the panko breadcrumbs, ensuring an even coating.
- Heat the oil: In a pan, heat about ½ inch of oil over medium heat until shimmering.
- Fry the patties: Carefully place the patties into the oil and fry for 3-4 minutes on each side or until golden brown and crispy. Drain on a paper towel.
- Make the spicy mayo: Mix mayonnaise, sriracha, lemon juice, and honey (if using) in a small bowl.
- Drizzle and serve: Drizzle the spicy mayo over the crispy patties and garnish with extra green onions. Serve hot!
