Crispy Cheesy Cauliflower Fritters

Ingredients

  • 1 medium head of cauliflower, cut into florets
  • 2 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (or panko for extra crunch)
  • 1/4 cup finely chopped green onions (optional)
  • 2 cloves garlic, minced
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp paprika (optional)
  • 2–3 tbsp all-purpose flour (if needed to bind)
  • Oil for frying (vegetable or olive oil)

Instructions

  1. Steam Cauliflower:
    Steam or boil cauliflower florets until fork-tender (about 8–10 minutes). Drain well and let them cool.
  2. Mash Cauliflower:
    Transfer to a large bowl and mash with a fork or potato masher, leaving some small chunks for texture.
  3. Mix Ingredients:
    Add eggs, cheddar cheese, Parmesan, breadcrumbs, green onions, garlic, pepper, salt, paprika, and flour if needed. Mix until well combined. The mixture should be firm enough to hold its shape.
  4. Shape Fritters:
    Form small patties or fritters with your hands or a spoon.
  5. Cook Fritters:
    Heat a non-stick skillet with 2–3 tbsp of oil over medium heat. Fry the fritters in batches until golden brown and crispy on both sides (about 3–4 minutes per side).
  6. Drain:
    Transfer to a paper towel-lined plate to remove excess oil.
  7. Serve:
    Serve hot with sour cream, yogurt dip, or your favorite sauce.
