Ingredients
- 1 medium head of cauliflower, cut into florets
- 2 eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (or panko for extra crunch)
- 1/4 cup finely chopped green onions (optional)
- 2 cloves garlic, minced
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp paprika (optional)
- 2–3 tbsp all-purpose flour (if needed to bind)
- Oil for frying (vegetable or olive oil)
Instructions
- Steam Cauliflower:
Steam or boil cauliflower florets until fork-tender (about 8–10 minutes). Drain well and let them cool. - Mash Cauliflower:
Transfer to a large bowl and mash with a fork or potato masher, leaving some small chunks for texture. - Mix Ingredients:
Add eggs, cheddar cheese, Parmesan, breadcrumbs, green onions, garlic, pepper, salt, paprika, and flour if needed. Mix until well combined. The mixture should be firm enough to hold its shape. - Shape Fritters:
Form small patties or fritters with your hands or a spoon. - Cook Fritters:
Heat a non-stick skillet with 2–3 tbsp of oil over medium heat. Fry the fritters in batches until golden brown and crispy on both sides (about 3–4 minutes per side). - Drain:
Transfer to a paper towel-lined plate to remove excess oil. - Serve:
Serve hot with sour cream, yogurt dip, or your favorite sauce.
