Ingredients

  • 3 medium potatoes, boiled and peeled
  • 1 cup shredded cheddar cheese (or mozzarella for a gooey center)
  • 2 tbsp cornstarch (or all-purpose flour)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 1 egg, beaten (for coating)
  • 1 cup breadcrumbs (panko for extra crunch)
  • Oil for frying

Instructions

  1. In a mixing bowl, mash the boiled potatoes until smooth.
  2. Add shredded cheese, cornstarch, garlic powder, paprika, salt, and pepper. Mix until well combined.
  3. Shape the mixture into small bite-sized balls or patties.
  4. Dip each ball into the beaten egg, then coat with breadcrumbs.
  5. Heat oil in a deep pan over medium heat.
  6. Fry the potato bites in batches until golden brown and crispy, about 2–3 minutes per side.
  7. Remove and drain on paper towels.
  8. Serve hot with ketchup, garlic mayo, or your favorite dipping sauce.
