- 2 cups broccoli florets, finely chopped (steamed or blanched)
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 1 cup breadcrumbs (divided: ½ cup for mixture, ½ cup for coating)
- 2 eggs (1 for mixture, 1 for coating)
- 2 cloves garlic, minced
- ½ teaspoon onion powder
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- Oil, for frying (or use an air fryer)
Instructions
- Prepare Broccoli:
Finely chop steamed or blanched broccoli and pat dry to remove excess moisture. - Mix Ingredients:
In a large bowl, combine broccoli, cheddar cheese, Parmesan, ½ cup breadcrumbs, 1 beaten egg, garlic, onion powder, salt, and pepper. Mix until well combined. - Form Balls:
Scoop out about a tablespoon of the mixture and roll into small balls. - Coat the Balls:
Beat the second egg in a small bowl. Dip each ball into the egg, then roll in the remaining breadcrumbs to coat. - Fry or Air Fry:
- To Fry: Heat oil in a pan over medium heat. Fry balls in batches until golden brown and crispy (about 3–4 minutes per side). Drain on paper towels.
- To Air Fry: Spray balls lightly with oil. Air fry at 375°F (190°C) for 10–12 minutes or until golden and crisp, shaking halfway through.
