Ingredients

  • 3 medium zucchinis, cut into sticks

  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 large eggs, beaten

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. Cut zucchinis into even sticks (like fries). Pat dry with a paper towel.
  3. In a bowl, mix breadcrumbs, Parmesan, garlic powder, Italian seasoning, paprika, salt, and pepper.
  4. In another bowl, whisk the eggs.
