Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
- Cut zucchinis into even sticks (like fries). Pat dry with a paper towel.
- In a bowl, mix breadcrumbs, Parmesan, garlic powder, Italian seasoning, paprika, salt, and pepper.
- In another bowl, whisk the eggs.
- Dip each zucchini stick into the egg, then coat with the breadcrumb mixture. Place on the prepared baking sheet.
- Lightly spray the coated zucchini sticks with cooking spray for extra crispiness.
- Bake for 18–22 minutes, flipping halfway, until golden brown and crispy.
- Serve warm with marinara sauce, ranch, or your favorite dip.
