Ingredients:
- 1 pound small potatoes (like baby Yukon Gold or red potatoes)
- 1/2 pound bacon, thinly sliced (about 10-12 slices)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- Pinch of salt (or to taste)
- Optional: Chopped fresh chives or parsley for garnish
Instructions:
- Prepare the Potatoes:
- Preheat oven to 400°F (200°C).
- Wash the potatoes thoroughly. If the potatoes are larger than a bite size, cut them in half or quarters.
- In a bowl, toss the potatoes with olive oil, garlic powder, paprika, salt, and pepper. Mix well to coat evenly.
- Par-Boil the Potatoes (Optional but Recommended):
- For a softer interior, place the seasoned potatoes into a pot of cold water, bring the water to a boil, and cook for 5 minutes. Drain the potatoes well and let them cool slightly. This step is optional, but helps to ensure the potatoes are fully cooked in the oven.
- Wrap with Bacon:
- Cut each bacon slice in half or thirds, depending on the size of your potatoes.
- Wrap each potato piece with a slice of bacon, securing it with a toothpick if needed.
- Place the wrapped potatoes onto a baking sheet lined with parchment paper.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and the potatoes are tender.
- If you would like the bacon extra crispy, you can broil them for the last 1-2 minutes of cooking time, watching very carefully to prevent burning.
- Cool and Serve:
