Crispy Bacon Wrapped Potato Bites Recipe

These bite-sized appetizers are the perfect combination of creamy potato and crispy bacon. They’re great for parties, game days, or just a fun snack.  

Ingredients:

  • 1 pound small potatoes (like baby Yukon Gold or red potatoes)  
  • 1/2 pound bacon, thinly sliced (about 10-12 slices)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • Pinch of salt (or to taste)
  • Optional: Chopped fresh chives or parsley for garnish

Instructions:

  1. Prepare the Potatoes:
    • Preheat oven to 400°F (200°C).
    • Wash the potatoes thoroughly. If the potatoes are larger than a bite size, cut them in half or quarters.
    • In a bowl, toss the potatoes with olive oil, garlic powder, paprika, salt, and pepper. Mix well to coat evenly.
  2. Par-Boil the Potatoes (Optional but Recommended):
    • For a softer interior, place the seasoned potatoes into a pot of cold water, bring the water to a boil, and cook for 5 minutes. Drain the potatoes well and let them cool slightly. This step is optional, but helps to ensure the potatoes are fully cooked in the oven.
  3. Wrap with Bacon:
    • Cut each bacon slice in half or thirds, depending on the size of your potatoes.
    • Wrap each potato piece with a slice of bacon, securing it with a toothpick if needed.
    • Place the wrapped potatoes onto a baking sheet lined with parchment paper.
  4. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and the potatoes are tender.
    • If you would like the bacon extra crispy, you can broil them for the last 1-2 minutes of cooking time, watching very carefully to prevent burning.
  5. Cool and Serve:
    • Remove the toothpick (if used) from each potato bite.
    • Let them cool slightly before serving.
    • Garnish with chopped chives or parsley, if desired.
    • Serve warm.
