Ingredients:

  • 8 slices of fresh white or brown bread
  • 2 medium-sized boiled potatoes (mashed)
  • 1/2 cup mixed vegetables (carrots, peas, and corn)
  • 1 small onion (finely chopped)
  • 1 green chili (finely chopped)
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon cumin seeds
  • Salt to taste
  • 1 tablespoon chopped coriander leaves
  • 2 tablespoons oil (for cooking the filling)
  • Water (to moisten bread)
  • Oil for deep frying

Instructions:

  1. Prepare the Filling:
    • Heat 2 tablespoons of oil in a pan on medium heat.
    • Add cumin seeds and let them splutter.
    • Add finely chopped onions and green chilies. Sauté until the onions turn translucent.
    • Add the mixed vegetables and cook for 3–4 minutes until softened.
    • Mix in the mashed potatoes, red chili powder, turmeric powder, garam masala, and salt.
    • Stir well to combine all ingredients.
    • Turn off the heat and sprinkle chopped coriander leaves. Set the filling aside to cool.
  2. Prepare the Bread:
    • Take a slice of bread and trim off the edges using a knife.
    • Dip the bread slice lightly in water and squeeze gently to remove excess moisture. Be careful not to tear the bread.
  3. Assemble the Bread Roll:
    • Place a small amount of the prepared filling in the center of the moistened bread slice.
    • Fold the edges of the bread over the filling and shape it into a smooth, oval roll.
    • Press gently to seal the edges, ensuring the filling doesn’t spill out. Repeat the process for all bread slices.
  4. Fry the Bread Rolls:
    • Heat oil in a deep frying pan over medium heat.
    • Test the oil by dropping a small piece of bread into it; if it sizzles and rises, the oil is ready.
    • Carefully slide the bread rolls into the hot oil, a few at a time.
    • Fry them until they turn golden brown and crispy on all sides.
    • Remove the rolls using a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.
  5. Serve:
    • Serve the crispy bread rolls hot with ketchup, mint chutney, or tamarind chutney.

These bread rolls are not only easy to make but also incredibly versatile. Customize the filling with your favorite ingredients, such as cheese, paneer, or chicken, to create your own version of this beloved snack. Enjoy the perfect crunch in every bite!
