Creation of Coconut Cake adorned with Seven-Minute

Ingredients

For the Coconut Cake:

  • 2 ½ cups cake flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 cup coconut milk
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • 1 cup sweetened shredded coconut

For the Seven-Minute Frosting:

  • 3 large egg whites
  • 1 ½ cups granulated sugar
  • ⅓ cup cold water
  • ¼ tsp cream of tartar
  • 1 tsp vanilla extract

For Garnish (Optional):

  • 1 cup toasted coconut flakes

Instructions

To Make the Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Sift together cake flour, baking powder, and salt in a bowl. Set aside.
  3. In a large mixing bowl, cream butter and sugar until light and fluffy (about 3–5 minutes).
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in the vanilla and almond extract.
  6. Alternately add the dry ingredients and coconut milk, beginning and ending with dry. Stir in shredded coconut.
  7. Divide batter evenly between prepared pans and bake for 25–30 minutes, or until a toothpick comes out clean.
  8. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.

To Make the Seven-Minute Frosting:

  1. In a heatproof bowl (or double boiler), combine egg whites, sugar, water, and cream of tartar.
  2. Place the bowl over simmering water (do not let the bowl touch the water).
  3. Beat constantly with a hand mixer on high speed for exactly 7 minutes, or until stiff glossy peaks form.
  4. Remove from heat and beat in vanilla for 1 more minute until spreadable.

To Assemble:

  1. Place one cake layer on a serving plate and spread a generous layer of frosting on top.
  2. Top with second cake layer and frost the top and sides of the entire cake.
  3. Press toasted coconut flakes onto the frosting for a finishing touch.

Serve and enjoy a slice of heaven — fluffy, coconutty, and crowned with pillowy frosting perfection!
