Ingredients
For the Coconut Cake:
- 2 ½ cups cake flour
- 2 ½ tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs, room temperature
- 1 cup coconut milk
- 1 tsp vanilla extract
- ½ tsp almond extract (optional)
- 1 cup sweetened shredded coconut
For the Seven-Minute Frosting:
- 3 large egg whites
- 1 ½ cups granulated sugar
- ⅓ cup cold water
- ¼ tsp cream of tartar
- 1 tsp vanilla extract
For Garnish (Optional):
- 1 cup toasted coconut flakes
Instructions
✅ To Make the Cake:
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Sift together cake flour, baking powder, and salt in a bowl. Set aside.
- In a large mixing bowl, cream butter and sugar until light and fluffy (about 3–5 minutes).
- Add eggs one at a time, beating well after each addition.
- Mix in the vanilla and almond extract.
- Alternately add the dry ingredients and coconut milk, beginning and ending with dry. Stir in shredded coconut.
- Divide batter evenly between prepared pans and bake for 25–30 minutes, or until a toothpick comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
✅ To Make the Seven-Minute Frosting:
- In a heatproof bowl (or double boiler), combine egg whites, sugar, water, and cream of tartar.
- Place the bowl over simmering water (do not let the bowl touch the water).
- Beat constantly with a hand mixer on high speed for exactly 7 minutes, or until stiff glossy peaks form.
- Remove from heat and beat in vanilla for 1 more minute until spreadable.
✅ To Assemble:
- Place one cake layer on a serving plate and spread a generous layer of frosting on top.
- Top with second cake layer and frost the top and sides of the entire cake.
- Press toasted coconut flakes onto the frosting for a finishing touch.
