Ingredients
- 200g (7 oz) white chocolate, chopped
- 2 cups heavy whipping cream, divided
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- Optional: fresh berries, grated white chocolate, or mint leaves for garnish
Instructions
- Melt the chocolate: In a heatproof bowl, melt the white chocolate over a pot of gently simmering water (double boiler method) or in short bursts in the microwave, stirring until smooth. Let it cool slightly.
- Whip the cream: In a large bowl, whip 1 ½ cups of the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Fold together: Gently fold the melted white chocolate into the whipped cream until well combined and smooth.
- Chill: Divide the mousse into serving glasses or bowls. Refrigerate for at least 2 hours, or until set.
- Serve: Just before serving, whip the remaining ½ cup of cream and pipe or spoon on top of the mousse. Garnish with fresh berries, grated white chocolate, or mint leaves if desired.
