Ingredients

  • 1 ½ cups graham cracker crumbs (or digestive biscuits, crushed)
  • ½ cup unsalted butter, melted
  • 1 (8 oz / 225g) package cream cheese, softened
  • 1 (14 oz / 400g) can sweetened condensed milk
  • ¼ cup lemon juice (freshly squeezed)
  • 1 tsp vanilla extract
  • Whipped cream (for topping, optional)
  • Fresh fruit or chocolate shavings (optional garnish)

Instructions

  1. In a bowl, combine graham cracker crumbs with melted butter. Mix well and press firmly into the bottom of a square baking dish to form the crust. Place in the fridge for 15 minutes to set.
  2. In a large mixing bowl, beat the cream cheese until smooth and fluffy.
  3. Add sweetened condensed milk, lemon juice, and vanilla extract. Beat until creamy and well blended.
  4. Pour the creamy mixture evenly over the chilled crust.
  5. Refrigerate for at least 3–4 hours (or overnight) until fully set.
